Peppermint Ribbons Cookie Recipe

The peppermint ribbons cookie recipe is perfect for the holiday season. Place a few of these mint cookies with a cup of tea or hot chocolate for a cozy snack!

Ingredients 3 sticks (1 1/2 cup) salted butter, softened 1 cup granulated sugar 1 large egg 1 teaspoon vanilla extract 1/2 teaspoon peppermint extract

3 1/2 cups all-purpose flour 1 teaspoon baking powder

Red and/or green decorating sugar

Glaze: 4 ounces white chocolate. chopped 2 teaspoons shortening

Hardware Whisk Large bowl Medium bowl

Microwave safe bowl Cookie sheets Cookie press with ribbon template Mixer

Step 1: Preheat oven to 375 degrees F. Step 2: In a medium bowl, whisk together flour and baking powder; set aside. Step 3: In a large bowl, beat together butter and sugar with an electric mixer until creamy. Step 4: Add egg, vanilla extract, and peppermint extract; continue beating until well mixed. Step 5: Gradually add flour mixture, beat until well mixed. Step 6: Fill cookie press with dough, press dough into 12-inch long ribbons onto ungreased cookie sheet. With a knife, slice each ribbon every 2 inches but do not separate. Step 7: Sprinkle with decorating sugar. Step 8: Bake 5-8 minutes or until edges are lightly browned. Cool completely, then break apart.

Glaze: Step 1: In a microwave safe bowl, on medium-high setting on microwave oven heat chocolate and shortening until melted and smooth. Step 2: Using the tines of a fork, drizzle glaze over top of each cookie, let stand until set.

Makes 80 cookies.
